You can create a keyboard shortcut for almost anything in InDesign. Go to your Keyboard Shortcuts mentu, look under Panel menus, find Insert Cross-references, and type in your short cut. (It will warn you if the shortcut is used for something else.) I would change the context to Text since that is the only time you want the x-ref to work.

Open your System Preferences > Keyboard > Keyboard Shortcuts and see if you can change/remove some of the defaults. You should be add in your down shortcut there on a per-app basis.

I tried this, and assigned a shortcut of cmd + H to create a hyperlink. When I try to use the shortcut, it takes me back to my web browser. I tried to assign opt+cmd+H and when I used that nothing happens.

Command-H is the default Mac shortcut for Hide (application). If you really want to use that command, you need to change the shortcut in your mac settings. I believe you have to use a third-party utility to disable the shortcut (unless there is some terminal code that can be used).
